Fig Smoothie: 2 ways!

I've recently been on an overnight oats kick but after a small hiatus from the smoothie wagon, I'm back on! Big thanks to my husband who recently asked me to double up my smoothies so he could enjoy them for breakfast as well.


I will absolutely continue to include overnight oats and chia seed pudding into my rotation, but smoothies have my heart when it comes to a quick and easy breakfast. All of my smoothies can be made in just about 5 minutes and are loaded with fiber, vitamins and other nutrients that fuel my body with the energy I need to keep up with two kids and a busy schedule. They are also a great way to sneak in some extra veggies for the kids.

During one of our recent trips to the farmers market, I picked up a basket of figs. They were so beautiful and have quickly become the perfect addition to our morning smoothies in not one but TWO ways! These two recipes are delightful - I hope you enjoy!


Maple Fig Smoothie Bowl (serves 1)


Ingredients:

  • 1 c. unsweetened almond milk

  • 2 - 3 fresh figs, halved

  • 1 T. ground flaxseed

  • 1 T. Lakanto maple flavored syrup

  • 1 T. almond butter

  • 1 - 2 scoops vanilla protein powder

  • 1/2 t. cinnamon

  • 1.5 c. steamed and frozen yellow squash

  • pinch of pink sea salt

Instructions:

  • Add all ingredients to a high speed blender

  • Blend and tamp until thick and creamy - this will take time to create a creamy thick smoothie bowl so be patient and use your tamping tool to help :)

  • Top with your favorites (more figs, berries, nuts, seeds, etc.!) and enjoy!

If you prefer a smoothie over a smoothie bowl simply add another cup of almond milk or water.


Cacao Fig Smoothie (serves 1)


Ingredients:

  • 1 c. unsweetened almond milk

  • 1 c. water

  • 2 - 3 fresh figs, halved

  • 1 T. chia seeds

  • 1 T. cacao powder

  • 1 T. almond butter

  • 1 - 2 scoops vanilla or chocolate protein powder

  • 1.5 c. steamed and frozen zucchini

  • pinch of pink sea salt

  • OPTIONAL: 1/2 t. cinnamon

Instructions:

  • Add all ingredients to a high speed blender

  • Blend and tamp until creamy

  • Top with your favorites or enjoy as is!
