Eat the Rainbow: Pomegranate & Beet Salad

This week, I announced the Eat the Rainbow Challenge and I cannot wait to kick it off!


Eating the Rainbow is one of my favorite concepts to uncomplicate healthy eating.


It's a concept that changed my own relationship with food - and ultimately my health.


It helped me to stop obsessing over food, counting calories and feeling deprived.


When I started focusing on Eating the Rainbow and the amount of color on my plate, I started to feel more energized, my body changed and I now feel healthier than I've ever felt before.


And the best part is that it's so simple.


Eating healthy really doesn't have to be hard. We just need to become aware of how we are fueling our body and how it is responding.


When we take notice of these things it can quickly become apparent what provides us with the most energy and makes us feel the best. This is the foundation to which we build upon. We acknowledge feeling healthy and the energy that comes with it and we do more of it - we build these habits one at at time.


This is what the Eat the Rainbow Challenge is all about - building healthy habits one day, one color at a time.


Here's a sneak peak into one of the recipes you receive as part of the Challenge:


Pomegranate & Beet Salad (serves 2)

3 c. pre-cooked beets, chopped

1 c. red onion, diced

1 c. pomegranate seeds

2 c. arugula

2 c. spinach

¼ c. goat cheese

¼ c. almonds, chopped

2 - 4 T. balsamic vinaigrette

OPTIONAL: top with your favorite lean protein (chicken, fish, tofu, etc.)

Add greens to a medium salad bowl, toss in beets, red onion, pomegranate seeds, goat cheese and almonds. Top with balsamic vinaigrette and toss until well mix. Serve & enjoy!
