Arugula & Farro Salad

Summer is just around the corner and our favorite salads are back on a heavy rotation. This Arugula salad is a family favorite - and one that I often bring to BBQs and summer parties to share with others because it's simple and easy to make!


I typically serve this salad with grilled chicken but recently tested a brand-new air fried blacken shrimp recipe that is here to stay.

Arugula & Farro Salad


Ingredients

5-6 c. loose arugula (I use ~3/4 of a 7oz bag)

2 c. cherry tomatoes, halved

1 c. dry farro, cooked according to directions on package

1/3 c. mediterranean herb seasoned feta

3-4 T. balsamic vinaigrette


Instructions

  1. cook farro according to directions on package - drain and run under cold water to cool once done cooking.

  2. Add arugula to a large salad bowl, toss in cherry tomatoes and feta.

  3. Toss in feta and balsamic vinaigrette.

  4. Top with air fried blacken shrimp or other favorite protein - or enjoy as is!
