Vanilla Peanut Butter N'oatmeal

The temperature is quickly dropping here in Connecticut and while the weather is beautiful this time of year, my morning walks have left me with a bit of a chill. To help me warm up, I've turned my Vanilla Peanut Butter Breakfast Pudding into a warm Vanilla N'oatmeal.


I am a big fan of oatmeal in the morning - especially during the winter months, but this Vanilla N'oatmeal provides a delicious lower carb alternative for those chilly mornings....and it's super easy to make - making it perfect for the days when you are short on time.


Ingredients


1 T. ground flaxseed

1 T. chia seeds

2 T. hemp seeds

2 scoops vanilla protein powder

2 scoops collagen powder (optional)

1/2 t. vanilla extract

3/4 c. unsweetened almond milk


Instructions

  1. Add all ingredients, except the vanilla, to a small saucepan and cook over medium low heat until milk is absorbed, and the mixture is thick.

  2. Stir in the vanilla extract.

  3. Spoon into a bowl, top with yogurt, peanut butter, fruit or other favorite toppings.
