Move over, overnight oats! I have been obsessed with this breakfast pudding lately. It's the perfect recipe for this time of year as the kids head back to school and our schedules get busy once again.
It's quick, easy and balanced - filled with the nutrients your body needs to keep your belly full and your energy up.
I've been making 2-3 of these at a time so I have them in the refrigerator ready to go.
1 T. ground flaxseed
1 T. chia seeds
1 T. cacao powder
2 scoops protein powder of choice
2 scoops collagen powder (optional)
1 T. almond butter
3/4 c. unsweetened almond milk
Add all dry ingredients to an airtight container. Stir in almond milk and mix well. Add almond butter and stir into mixture. Refrigerate overnight or for a minimum of two hours. Enjoy as is or top with fruit, yogurt or other favorite toppings!
