Tex Mex Casserole

A lot of women struggle with wanting to eat healthy but not having the time to cook a healthy meal. Don't let this stop you anymore. This Tex Mex casserole is proof that you don't need a lot of time to prepare a healthy meal that makes you feel good - and that eating heathy doesn't need to be boring.


In just about 20 minutes this recipe uses simple ingredients to bring together a dinner that fills your belly, makes you feel good and is far from boring. This is a must try recipe - and when you try it, come back here and let me know what you think!


Ingredients:

  • 1 T. avocado or olive oil

  • 1 medium red onion, chopped

  • 2 t. minced garlic

  • 1 orange bell pepper, chopped

  • 2 c. frozen corn

  • 2 cans (14 oz) fire roasted diced tomatoes

  • 1 can black beans, drained and rinsed

  • 1.5 c. cooked quinoa

  • 3 c. baby spinach

  • 2 T. taco seasoning

  • cheddar or Mexican cheese for topping

Instructions

  1. Cook quinoa according to instructions on package (prep ahead of time for an even quicker cook time).

  2. Pre-heat oven to 375.

  3. Heat oil in a large skillet. Add onions, garlic and bell pepper; sauté for 5-7 minutes or until softened. Stir in taco seasoning, corn, diced tomatoes and black beans; sauté for another 3-5 minutes. Add in baby spinach and cook until lightly wilted (~ 3 minutes)

  4. Remove from heat. Top with cheese (or leave out if vegan or dairy free!) Cover and bake in oven for 5-10 minutes or until cheese is melted. Serve and enjoy!
