Southwest Caesar Salad

Caesar salads are a staple in our house - typically topped with grilled salmon, a meal the whole family enjoys - even my 7-year old son.


Caesar salads are a quick and easy way to increase leafy greens in your diet. Our grilled salmon Caesar salad is ready in under 20 minutes and that's my kind of dinner! Especially when the weekdays are busy with client calls, school and running my son to hockey practice every other night.


As much as I love a classic Caesar salad, this updated take on the original is quickly topping the list. It's a replica of one of my favorite salads from a local restaurant that we don't get to very often and I'm so happy it came together so perfectly and now I can enjoy it at home.


Just like a classic Caesar, it was quick and easy to prep, ready in under 10 minutes...and it made enough for my son and I to enjoy again for dinner (when I topped it with a left over crab cake - so good!).

Southwest Caesar Salad (serves 2-3)


Ingredients

  • 3 c. romaine hearts, chopped

  • 1 c. purple kale, chopped

  • 1 c. corn (I used 2 ears of corn I had leftover)

  • 1 c. black beans, drained and rinsed

  • 1 c. roasted or air fried sweet potatoes

  • 1/4 c. parmesan, shredded

  • 1/4 c. tortilla chips, crushed

  • 3 - 4 T. Caesar salad dressing (I love Trader Joe's Caesar salad)

Instructions

  1. Combine all ingredients in a large bowl and mix well.

  2. Plate in a salad bowl, top with your favorite protein or enjoy as is!
