If you love Peanut Butter Cups as much as I do, these are a must try. Filled with protein, healthy fats and all the deliciousness of traditional peanut butter cups - these make the perfect alternative for any day of the week. *They are also kid approved - my 8- and 5-year-olds love them!

Ingredients
3/4 c. peanut butter (Skippy Natural, smooth is my favorite)
1/3 c. vanilla protein powder of choice
1/2 t. vanilla extract
2 T. maple syrup
1/2 c. chocolate chips
Instructions
Mix all ingredients, except chocolate chips in a bowl.
Spoon mixture evenly into a mini muffin pan. Use a spoon and make a small divot in the center of each cup.
Melt chocolate chips in microwave (~90 seconds), top PB cups with a spoonful of melted chocolate.
Freeze overnight or for a minimum of 2 hours, use a knife or icing spatula to remove from mini muffin pan; place in freezer bag and store in freezer.
