Deconstructed Stuffed Peppers

For a while now, I've been in a pattern of having the same couple of meals every week - which by the way, is not a problem at all, especially if that is what works best for you and keeps you coming back for more homemade healthy meals. It's what worked for us for the past couple of months - but I've been getting back into cooking up something new once or twice a week and it's been so fun to get back into it.


As a health coach and a mom of two my one requirement always is that it hase to be simple.


This deconstructed stuffed pepper dinner is just that - so much so, that my nine-year-old practically made the whole thing (win- win!).

Deconstructed Stuffed Peppers


Ingredients (serves 6-8)

  • 1 lb ground turkey

  • 1/2 medium yellow onion, chopped

  • 1 t. garlic powder

  • 1 t. dried basil

  • 1 t. dried oregano

  • 1 can black beans (14 oz), drained and rinsed

  • 1 can of crushed tomatoes (28 oz)

  • 3 bell peppers (I used red, orange and yellow), cut in 1" squares

  • 2 c. cooked rice

  • 1.5 c. shredded cheddar cheese

  • salt and pepper to taste


Instructions

  1. Preheat oven to 350 F.

  2. Brown ground turkey in a large skillet, once brown add onions, garlic powder and salt and pepper; cook down for ~5 minutes.

  3. Meanwhile, cut bell peppers and place in the bottom of a 9"x13" baking dish.

  4. Add black beans, crushed tomatoes, basil and oregano to the turkey and onion mixture; stir until mixed well then stir in cooked rice.

  5. Pour mixture over the bell peppers in the baking dish and spread evenly.

  6. Top with shredded cheese.

  7. Bake for 40 minutes uncovered. Let cool for 5 minutes then serve and enjoy!
