Air Fryer Brussel Sprout Salad

It is FINALLY feeling like spring here in Connecticut, so this week we are all about grilling! We absolutely love to grill - the flavors are so robust, and it helps to minimize kitchen clean-up which is always a win in my book!


The plan to kick-off the week was pork chops on the grill with some air fried brussels sprouts and sweet potatoes. As the brussels sprouts were cooking away in the air fryer - I had this vision of a colorful salad. Air fried brussels sprouts as the base, topped with air fried sweet potatoes, a bit of crunch and a sweet and tangy finish.


Enter the most delicious air fryer brussels sprout salad. Using only ingredients, I had available, this salad came out perfect. Just the right blend of sweet and tangy and loaded with the colorful nutrients are bodies need to thrive.


This is a must try recipe - just right for any time of year! And if you don't have an air fryer, no worries! Simply throw the brussels sprouts and sweet potatoes on a sheet pan and roast them in the oven for the same delicious taste!

Air Fryer Brussel Sprout Salad


Ingredients

  • 2 lbs. brussels sprouts, ends trimmed and cut in half (or quarters for big ones)

  • 2-3 medium sweet potatoes, diced

  • 1/2 t. garlic powder

  • 1 t. pure maple syrup

  • 3 T. olive oil

  • 1/2 t. cinnamon

  • salt and pepper to taste

  • 2 T. craisins, chopped (I used Trader Joe's orange flavored craisins)

  • 2 T. almonds, chopped

  • 2 T. Balsamic Vinaigrette (I used Trader Joe's Fig Balsmic)

  • Sprinkle of goat cheese

Instructions

  1. Trim and cut brussels sprouts; add to air fryer and sprinkle with 1.5 T. olive oil, garlic powder, salt pepper and maple syrup. Air fry at 390 F for 20 minutes (toss halfway).

  2. While the brussels sprouts cook, prepare sweet potatoes by dicing into 1/4-1/2-inch cubes. Add sweet potatoes to a large mixing bowl and toss with the remaining olive oil, cinnamon and salt and pepper.

  3. Once brussels sprouts are done, transfer them to a large salad bowl.

  4. Add sweet potatoes to air fryer basket and cook at 400 F for 22 minutes (tossing halfway).

  5. When sweet potatoes are finished, add to the salad bowl with the brussels sprouts. Toss in craisins and almonds and mix together with the balsamic vinaigrette.

  6. Sprinkle with goat cheese, plate and enjoy with your favorite lean protein for a balanced meal.
