15-minute Sausage & Peppers

And just like that, hockey has started up again for my son and we are back to juggling practices and dinner time without adding too much stress to our evenings.


When we are getting used to a new schedule, I always rely on our favorite quick and easy dinners to help us adjust. This week was no different.


I planned for one of our favorite dishes - Chicken Sausage & Peppers because I know it's easy, we love it and with most of it prepared on the grill there is little kitchen clean-up! AND it takes only about 15-minutes from start to finish...talk about a win-win-win!


The next time you are in need of a quick and easy dinner - give this one a go. It checks all the boxes for a simple healthy meal and it's perfect for the whole family.

Chicken Sausage & Peppers


Ingredients

  • 1 lb. pre-cooked chicken sausage

  • 3 bell peppers (any color)

  • 1 medium red onion

  • 1 c. marinara sauce (Rao's Homemade is our absolute favorite)

Instructions

  • Slice bell peppers and onions.

  • Add to grill pan and place on grill over med/high heat; grill for about 5 minutes.

  • After about 5-minutes toss the peppers and onions and add the pre-cooked chicken sausage to the grill; cook for about 5 more minutes.

  • Remove from grill, slice the sausage and then add sausage, onions and peppers to a large bowl.

  • Stir in marinara sauce and mix well.

  • Serve with salad, veggies, pasta or other favorite & enjoy!
