Chicken Cheesesteak Skillet (serves 3-4)
1 lb. thin sliced chicken tenders
2-3 bell peppers, sliced
1 medium red onion, sliced
2 T. olive oil
1/4 lb. provolone cheese
salt, pepper, garlic powder to taste
Heat olive oil in large skillet. Add onion and red peppers. Cook until slightly tender.
Remove from skillet and add chicken into skillet.
Season chicken with salt, pepper and garlic powder to taste; cook through. Remove chicken from skillet, dice and add back in with peppers and onions, stir together.
Top with provolone cheese, cover and let cook for 2-3 more minutes until cheese is melted.
Enjoy as is, over brown rice, in a wrap or make it your own!
