Easy Weeknight Dinner: Chicken Cheesesteak Skillet

Life is busy and the dinnertime rush is real.


In this house we juggle hockey and gymnastic practice three nights a week along with client call, meetings and life in general. Having quick and easy meals is key to ensuring this family is fed and has the energy we all need to keep up.


This Chicken Cheesesteak Skillet is a new favorite! Quick and easy, balanced with protein, fiber and healthy fats to keep us satisfied and requires only one pan making clean-up a breeze.


If you struggle with the weeknight rush as well, get overwhelmed with what to make for dinner or are simply looking for more variety - give this recipe a go. Requiring only about 20 minutes to prepare, you won't be disappointed with how easy (and delicious!) this meal is.


Chicken Cheesesteak Skillet (serves 3-4)


Ingredients:

  • 1 lb. thin sliced chicken tenders

  • 2-3 bell peppers, sliced

  • 1 medium red onion, sliced

  • 2 T. olive oil

  • 1/4 lb. provolone cheese

  • salt, pepper, garlic powder to taste

Instructions:

  1. Heat olive oil in large skillet. Add onion and red peppers. Cook until slightly tender.

  2. Remove from skillet and add chicken into skillet.

  3. Season chicken with salt, pepper and garlic powder to taste; cook through. Remove chicken from skillet, dice and add back in with peppers and onions, stir together.

  4. Top with provolone cheese, cover and let cook for 2-3 more minutes until cheese is melted.

  5. Enjoy as is, over brown rice, in a wrap or make it your own!
