1 lbs. chicken thighs
2 cans (14oz) fire roasted tomatoes
1 can (14 oz) black beans
1.5 c. frozen corn
1 medium yellow onion, chopped
2 c. chicken broth (use 1 c. for a thicker chili)
1/2 c. buffalo sauce
salt and pepper to taste
Chop yellow onion.
Add all ingredients to a pressure cooker or slower cooker. Cook as follows:
Shred chicken, spoon into bowl, top with cheese, avocado or favorite toppings.
