Buffalo Chicken Chili

This buffalo chicken chili recipe is everything you need. It's healthy, balanced, quick and easy with minimal ingredients. This recipe requires only ONE ingredient to be chopped and can be cooked in the slow cooker or the pressure cooker - making it the perfect meal for even the busiest of nights!

Ingredients

1 lbs. chicken thighs

2 cans (14oz) fire roasted tomatoes

1 can (14 oz) black beans

1.5 c. frozen corn

1 medium yellow onion, chopped

2 c. chicken broth (use 1 c. for a thicker chili)

1/2 c. buffalo sauce

salt and pepper to taste


Instructions

  1. Chop yellow onion.

  2. Add all ingredients to a pressure cooker or slower cooker. Cook as follows:

  3. Shred chicken, spoon into bowl, top with cheese, avocado or favorite toppings.

  4. Enjoy!
